Aged Cheese Salad
This is not a side dish, but rather a main course and filling meal. You can also add corn or other vegetables if you want.
Ingredients
- Oude Kaas (aged Gouda cheese)
- Whole Wheat Pasta
- Croutons OR Bread + Olive Oil and Garlic Powder
- Bell Pepper
- Shallot (a small one)
- Raw Spinach
- Honey-Mustard Dressing
Preparation
- If making the croutons yourself, start the oven. Sprinkle olive oil and garlic powder over one or two slices of bread, then cut the slices into three or four pieces. Put it in the oven until dried and crispy. Rule of thumb: start the bread before the pasta, then take them out of the oven once the pasta is done.
- Set the pasta to boiling according to package instructions.
- Cut the vegetables and aged cheese into little cubes, shred the spinach fine. Add them to a tupperware container.
- Let the pasta (and bread) cool off before adding them to the vegetables. Break the bread into tiny, crouton-sized pieces as you do.
- Drizzle honey-mustard dressing on everything. Close the tupperware container and shake until the dressing evenly coats the whole salad.
